Join Janice McCue and KFPL for a live cooking demonstration.

Learn to make Three Sisters Mash, a hearty and filling dish found on many feast tables. Attendees will be able to ask questions following the demonstration and will receive a Zoom link upon registration. See ingredients and directions below.

 

Three Sisters Mash

 Ingredients:

 

1-2 tbsp sunflower oil

1 large shallot, chopped

1 small zucchini, cut into 1” pieces

1 cup braised beans (recipe below)

1 cup sweet corn kernals

½ cup cooked hominy corn

2 tbsp maple syrup

1 tsp chopped sage

1 tbsp chopped mint

Smoked salt

 

Directions:

Add oil to a large skillet and set over medium heat. Cook the shallot until tender, about 3-5 minutes. Add the zucchini and cook until tender, stirring often. Stir in the beans, corn and hominy. Cook until the corn is bright and tender. Stir in the maple syrup, sage and mint. Season with smoked salt. Serve warm or at room temperature.

 

Braised Beans

 

Ingredients:

1 cup dried beans (black eye, cranberry, pink, pinto)

3 cups cold water

1 5-6” branch of cedar

Salt the freshly ground juniper to taste

 

Directions:

Put beans in a large pot or bowl and cover with water by 3”. Allow to soak for at least 6 hours or overnight. Drain and transfer to a medium saucepan. Add 3 cups of cold water to the pot and lay the cedar branch over the beans. Bring to a boil. Cover and simmer until the beans are very soft about 25-30 minutes. Remove the cedar and drain* (reserve the cooking liquid for soups and stews). Let cool.
